Tofu Course  (All soy products used are G.M.O. Free)

Japanese Yen 10,000 (No.TF-1)

 

We will begin by sampling different types of tofu.  Then we will make fresh yuba (soy milk skin) by gently collecting

thin layers of yuba formed on the surface of a warmed pot of soy milk.  We can enjoy this delicacy with soy sauce and wasabi or ginger. Then, we make three kinds of tofu dishes; tofu and vegetables in sweet and sour sauce, Tsukune (pan-fried tofu) : ingredients -tofu and tuna flakes , soy sauce, etc., and Shira-ae (vegetables with tofu dressing).  

You will be served brown rice mixed with thinly fried tofu and clear soup. For Vegans, Tsukune can be changed to tofu steak.

 


Sushi Course

Japanese Yen 12,000  (No. SC-1)


You will learn how to make rolled  sushi (Maki Zushi ) and Nigiri, hand pressed or formed sushi.

Ingredients : Maki Zushi /crab meat sticks, cucumbers, egg omelet, tuna,  Nigiri / Tuna, Shrimp, Salmon,etc.

depends on the season. You will also learn how to make sushi vinegar from scratch.


Japanese Home Cooking

Japanese Yen 10,000  (No. JH-1 to No. JH-4, left to right, or top to down for mobile)

Consisting of rice, one miso soup, one main dish and two side dishes. All in this course, you will learn how to make an authentic Miso soup from scratch, using bonito flakes and Kombu kelp.  Instruction will also be given for two side dishes. Please choose one main dish from the following list.

No. JH-2/ Teriyaki Chicken (Glazed Grilled Chicken)

No. JH-3/ Shogayaki (Ginger Grilled Pork)  Shoga means Ginger.

No. JH-4/  Buri Teriyaki (Glazed Grilled Yellowtail)

 

Side dishes

 

Vegetables with sesame dressing : Kidney Beans or Spinach with Sesame dressing.

Rolled Egg Omelet.

 


Tempura Course

Tempura, batter-fried vegetables and fresh seafood,  is also a popular and well-known Japanese dish. With dipping sauce based soy sauce and dashi. Grated Daikon(radish) and ginger to taste. Accompanied with rice and Miso or clear soup.
